What We Bake

 

All our products are hand made with the highest quality organic flour.  We only use slow natural fermentation (typically 36 hours) to produce our sourdough breads, maximising flavour and aiding digestion. 

 

We continue to extend our use of locally grown and stone milled organic and sustainably farmed wheat.

​

There are no yeast or additives in any of our bread, just organic flour, water and salt.  We use a little yeast in our Viennoiserie (Croissants, Pain au Chocolat and Pain aux Raisins), added to the sourdough in the last mix to give a lightness of bake.

 

The majority of our products are Vegetarian and Vegan friendly. 

​

Allergens - all our products contain Gluten, other allergens will be noted in bold the ingredient sections to each product. 

 

Please also be aware, we bake products with dairy, eggs, nuts and sesame, and whilst we clean down thoroughly, there may still be traces.

​

 

How it Works

We make a wide range of sourdough breads and viennoiserie at differing prices falling into the following categories: Vienoisserie, Everyday, Ancient Grain, Rustic, Seeded, Variety and Treat Breads

​

As well as Viennoiserie, we will give you a choice of four different sourdough breads each week from these categories.  These are baked to order in the mornings and delivered to your home straight from the Bakehouse in the afternoon.

​

The bread keeps well, particularly for toasting after a few days.  It freezes very well either whole or sliced, so you can peel off individual slices for sandwiches or toast.

​

To enjoy the Viennoiserie at its best, warm in the oven for 5-10 minutes at 160°C.

​

We deliver to Watton at Stone, Oaklands, Welwyn, Welwyn Garden City and the Villages toward Hertford on a Thursday afternoon and to Hertford and Hertford Heath on Friday afternoon.  Delivery is aimed to be with you between 15.00 and 18.00 (See 'Delivery Areas' for more details).

​

There is a minimum order of £6.00 for delivery.  Orders can also be picked up from the Bakehouse on your chosen day, there is no minimum order for pickup.

 

We bake to order to avoid waste.  With our Sourdough taking 36 hours to make, last orders are 18.00 on Tuesday for a Thursday or Friday delivery.

Croissant

Semi-Sourdough Croissant.  Using organic flour and free range eggs and Dawlicious raw milk from Amwell Place Farm in Hertford Heath.  With a deeper flavour from a 48 hour, three stage build sourdough process and a little yeast added in the last mix to give that lightness of bake.

​

Warm in the oven for 10 minutes at 160°C for best results.

​

Pain Au Chocolat

Semi-Sourdough Pain Au Chocolat. Dark Belgium chocolate combined with organic flour and free range eggs and Dawlicious raw milk from Amwell Place Farm in Hertford Heath.  With a deeper flavour from a 48 hour, three stage build sourdough process and a little yeast added in the last mix to give that lightness of bake.

Pain Aux Raisins

Semi-Sourdough Pain Aux Raisins. Earl Grey-soaked raisins and crème pâtissier. combined with organic flour and free-range eggs and Dawlicious raw milk from Amwell Place Farm in Hertford Heath. Ancient Grain

Spelt

Organic Spelt Sourdough.  With a slightly sweet nutty flavour. Made with 50% wholemeal Spelt flour, sustainably farmed and stoneground locally at Duchess Farm in Sawbridgeworth, combined with Organic white flour.  


Spelt is an ancient grain known as the ‘marching grain’ by the Romans and that in Greek mythology was gifted to the Greeks by the goddess Demeter. Its use in bread can be traced back a far as 5,000BC and is high in carbohydrates and packed with minerals and vitamins.

Einkorn

Organic Einkorn Sourdough. With a deep earthy flavour. Made with 30% wholemeal Einkorn flour, sustainably farmed and stoneground locally at Duchess Farm in Sawbridgeworth, combined with organic white flour.


One of the oldest members of the wheat family, a staple of hunter gatherers over 30,000 years ago and first domesticated in Mesopotamia around 10,000BC. Noted for its high nutritional content and levels of phosphorus, potassium, pyridoxine, vitamin A and beta-carotene (anti-oxidants).

Emmer

Organic Emmer Sourdough.  With a slightly sweet, nutty and buttery flavour.  Made with 30% organic wholemeal Emmer flour, combined with organic white flour.  

​

Emmer (or Farro) is an early wheat variety found in Bronze and Iron Age settlements dating back as far as 17,000BC.  Grown extensively in its domesticated form in ancient Egypt.  Compared to modern wheats, it is noted for its high content of resistant starch, carotenoids and other antioxidants.

​

Khorasan

Organic Khorasan Sourdough.  With a rich nutty flavour. Made with 30% organic wholemeal Khorasan flour, combined with organic white flour.  


Khorasan in one of the grains that helped build the pyramids, tracing back to the fertile crescent around 9,000BC. Legends tell of the grain used today, also known as Kamut, being recovered from an Egyptian tomb.  Amber in colour and twice the size of the modern wheat kernel, it is high in proteins, lipids, amino acids, vitamins and minerals.

YQ Population

Organic YQ Sourdough.  With a slightly sweet earthy flavour. Made with 40% organic wholemeal YQ flour combined with organic white flour. Grown organically at Turners of Bytham and stonemilled at Tuxford Windmill.


YQ is a population wheat, developed by Martin Wolfe at Wakelyns Farm.  He created a population of 190 crosses from 20 hertitage and modern base wheats. These then develop their own genetic characteristics, adapting and evolving to the local environment and soil and are perfectly suited to organic wheat farming.

Lys Brun

Organic Lys Brun Sourdough.  With a real depth of flavour, my new favourite grain. Made with 30% wholemeal organic Lys Brun flour, combined with organic white flour.

A Danish Heritage grain sustainably farmed and stonemilled at Duchess Farms in Sawbridgeworth. Wholemeal Lys Brun is high in fibre and essential minerals and vitamins

100% Stoneground Wholemeal

Organic 100% Wholemeal Sourdough.  Made with organic wholemeal flour stoneground at Mill Green Watermill near Hatfield.  With a little added molasses to give a sweet, deep and rich nutty flavour.  High in vitamins, minerals and fibre.

Ingredients: organic wholemeal wheat and rye flour, water, mollasses and salt.  Allergens: Gluten.

100% Rye with Seeds

Organic Tinned Seeded Rye Sourdough. Organic wholemeal and light rye flours, packed with organic whole rye grains and toasted organic pumpkin and sunflower seeds. Lower glutten alternative, delicious thinly sliced on its own as bread or toast, fabulous with cheese.

Ingredients: Organic wholemeal and light rye flour, water, organic whole rye grains, organic sunflower and organic pumpkin seeds, salt. Allergens: Gluten.

Wholemeal and Rye

Organic Wholemeal and Rye Sourdough. 50% organic wholemeal and rye mixed with organic white flour, producing a rich smooth flavour. You’ll be surprised how light and creamy the flavour despite the high proportion of wholemeal and rye.

Sprouted Grains

Sprouted Grains Sourdough. Organic white, wholemeal and rye flours, with sprouted wholegrain organic spelt, einkorn and naked oats giving an open crumb and adding texture and depth of flavour.

​

Sprouting (the simple process of stimulating germination by adding water) has a profound effect on the grain, increasing nutrient, mineral and antioxidants levels as well as the bioavailability of these to be absorbed by our bodies.

Sourdough Focaccia. Lovely deep sourdough flavour available topped with seasonal ingredients.  For example, rosemary and sea salt and tomato, black and green olives with thyme or a half and half mix of the two.

Gruyère and Olive

Gruyère and Olive Sourdough. A wonderful flavour combination of matured reserve Swiss Gruyère and green and black olives with small nuggets of Parmigiano Reggiano for an added umami tang. Delicious on its own or a great accompaniment to cured meats or other topping of your choice.

Tomato, Cheddar and Chilli Sourdough.  A deep and delicious flavour combination of sundried tomatoes, mature west country cheddar, dried basil and sesame seeds with a little paprika and chilli for added warmth.

Cranberry and Walnut

Organic Cranberry and Walnut Sourdough. A combination of organic white and Einkorn flours packed with orange-soaked organic cranberries and toasted organic walnuts with added organic toasted walnut oil.  Fabulous on its own and great with cheese.

Dark Chocolate and Sour Cherry

Dark Chocolate and Sour Cherry Sourdough. A slightly smaller loaf with a delicious combination of dark chocolate chunks and organic sour cherries in a cocoa infused organic sourdough. Beautifully moist inside.


Ingredients: organic white and wholemeal flours, organic cherries, chocolate (sugar, chocolate, cocoa butter, soya lecithin, natural vanilla flavour), water, cocoa powder (cocoa powder, acidity regulator: potassium carbonate), sunflower oil, and salt. Allergens: Gluten, dairy, soya.

Sourdough Stollen

Absolutely delicious and pure Christmas decadence. A combination of a rich sourdough made with organic flour, milk, egg, butter and honey.  Filled with homemade rum marzipan, rum and tea-soaked candied peal, organic raisins and sultanas with added vanilla extract and mixed spice.  All coated in flaked almonds, butter and vanilla sugar.  Comes beautifully wrapped and will see you through to the New Year.
